Background:

1,3-Dioleoyl-2-elaidoyl glycerol is a triacylglycerol that contains oleic acid at thesn-1 andsn-3 positions and elaidic acid at thesn-2 position. It has been used to study the effects of unsaturation andsn-2 substitution on the polymorphic behavior of triacylglycerols.¹
